So, I just read this really interesting article about plant-based eating and all the awesome recipes you can make. It’s called Vegetables star in Voraciously’s Plant Powered II recipe newsletter. Basically, it’s a whole newsletter filled with delicious and healthy meals that are all plant-based.

One thing that really caught my attention was the wide variety of veggies they use. From butternut squash to kale to eggplant, there’s something for everyone. And the best part? The recipes are actually easy to follow and don’t require any crazy ingredients.

I’ve been trying to incorporate more plant-based meals into my diet lately, and this newsletter is a game-changer. I mean, who knew I could make something as tasty as butternut squash mac and cheese without any dairy?

But it’s not just about being healthy or environmentally conscious, although those are definitely important reasons to consider a plant-based diet. Honestly, some of these recipes are just plain delicious. I never thought I’d be excited about eating Brussels sprouts, but the recipe for roasted Brussels sprouts with chickpeas and tahini dressing has me drooling.

Overall, I think this article is a great reminder that eating more vegetables doesn’t have to be boring or complicated. And with all of the delicious recipes out there, there’s really no reason not to try it out. Who knows, you might just discover your new favorite meal.
